Dry aging is a slow, traditional process for aging quality meats. In this procedure we use the dry air in a salt chamber, to facilitate the natural enzymes in the meat to break down the muscle fibre. This results in a fantastic concentration of flavour and exceptional succulence of meat.
We offer fresh beef and lamb, direct from the processor, from budget to premium cuts in a very efficient manner.
